Founded in 1790 in Mito City, Ibaraki Prefecture, Yoshikubo Sake Brewery makes full use of the skills of its master brewers.
This rare, limited edition sake is brewed while listening to the music of the genius Italian pianist, Alberto Pizzo, and can only be purchased here.
A new art experience that combines Japanese tradition with sound and color for a sensory experience.
We are also soon going to start a project with "GROUNDSTAR+", a regional revitalization gift set filled with Japanese craft techniques and art that are acclaimed worldwide.

What is Neiro Sake?
Sake has been rooted in the land of Japan since ancient times and has colored its culture. In order to open up a new future, the "Onsai Sake" project has been launched, fusing music and art. The first in the series of experiential products where tradition meets innovation is the birth of "Rimore," a Junmai Daiginjo sake.

The Makers
Yoshikubo Sake Brewery
Founded in 1790, this sake brewery is located in Honmachi, Mito City, which flourished as the economic center of the Mito Domain. It uses soft water from the Kasahara Waterway, which was built by order of Tokugawa Mitsukuni, pesticide-free Miyamanishiki rice, and rice from Ibaraki. Its sake, such as "Ippin," which was a rebrand of "Kago no Tsuki," beloved by Confucian scholar Toko Fujita and Mito Domain samurai during the late Edo period, has won numerous awards both in Japan and abroad.
In 2024, it will be available in the VIP rooms at Dodger Stadium, home of the Los Angeles Dodgers.
Alberto Pizzo
A genius pianist who inherits the traditional Italian Neapolitan style of playing.
His unique style is characterized by playing with only the strength of his fingertips, completely relaxing his shoulders and fingers, and playing with each finger independently, producing a delicate yet powerful tone. His clear and deep tone has been highly praised around the world, and he has captivated audiences at numerous international stages.
He won the Grand Prize in the Piano Division at the Ibra Grand Awards Japan in 2023. In recent years, he has been active in many areas, including performing at Carnegie Hall in New York, performing in Sicily, and collaborating with Japanese instruments at the Ginza Yamaha Hall.

Graphic Artist
He is responsible for the artwork for the Otosai sake label and furoshiki design.
Although he is a chalk artist originally from Florence, Italy, he is also active both in Japan and abroad. After graduating from high school, he entered California State University, Long Beach, USA, and graduated with a degree in art (graphic design). While he was a student, he participated in various chalk art contests and discovered the joy of live art. After graduating, he worked in California as a graphic designer and painter. After 10 years, he is now based in Japan. Recently, he was selected as a lecturer to teach large-scale painting to members of Nogizaka48 for a TV project. -
Association for protecting wooden houses made from domestic timber
Wood Experts
A group of wood craftsmen who produce the Yamizo cedar from Ibaraki Prefecture that is used for the wooden packaging boxes.
In cooperation with various businesses involved in wood distribution, we aim to build homes where consumers can live more comfortably and healthily, and also to contribute to a rich society that coexists with nature and the global environment. We sympathized with this project and fully cooperated and supported the production of the original wooden boxes.
Based on the knowledge and experience of lumber dealers, we promote the idea of "making the most of wood" and "using wood in the most effective way."
We aim to support activities that revitalize Japan, revitalize local communities, promote employment, and ultimately rediscover the value of domestic timber. -
GROUNDSTAR+
Best gift set
"GROUNDSTAR+" is a project that aims to spread the Japanese spirit of "omotenashi" (hospitality) to the world.
This gift set was born from the concept of wanting to give the best moment to a loved one. This time, we plan to create a product that would be perfect as a gift, with a sword box made from Yamizo cedar from Ibaraki Prefecture, a Kasama-yaki sake vessel inside, and wrapped in a furoshiki. It is a masterpiece that combines local tradition and craftsmanship. As a sustainable initiative that takes into consideration considerations of the environment and the protection of the local community, we are seeking supporters through crowdfunding. Your support will help connect Japanese craftsmanship and spirit to the future.

Yoshikubo Sake Brewery
For this project, we attempted something new: listening to Western music for 24 hours during the brewing process, from preparation to bottling.
The first thing that surprised me was how active the yeast was due to Alberto's music. It was so active that the fermentation proceeded so quickly that we had to use ice and adjust the temperature to balance the flavor.
The resulting Junmai Daiginjo was a truly one-of-a-kind masterpiece, and we were extremely pleased with the end result.
Moreover, the most pleasing effect for the sake brewery was that the craftsmen were able to work surrounded by Alberto's music. The bitterly cold sake brewery became a comfortable space, like a concert hall, and the music resonated not only with the yeast but also with the hearts of the craftsmen, greatly increasing their motivation and resulting in even more delicious sake. -

I have been living in Japan for about five years now and have always had a deep respect for Japanese traditions and culture.
This was the first time I had the valuable opportunity to experience that world directly through my own music.
I visited a sake brewery and listened to the stories of the master brewers and craftsmen, and selected these five songs. They were all inspired by their passion and skills. I still vividly remember the excitement I felt when I listened to the sound of the yeast fermenting while listening to my own songs.
Even though I'm not usually a big fan of alcohol, this Junmai Daiginjo has an amazingly well-balanced flavor that made me find myself drinking it all.
I once again felt that I wanted to be a musician who could touch people's hearts, just as music had the same effect on yeast.
I am honored to be involved in activities that promote intercultural exchange through art and preserve this beloved Japanese tradition. -

The sound is powerful beyond imagination from its compact size, and the spherical shape of the unit is designed to evenly envelop the entire space. The sound is characteristic of Alberto's piano, and the full range of tones is fully covered, from high to low, creating an environment that is just like a live performance.
Sound vibrations are transmitted not only to the ears but also through the surface of the entire body, creating an immersive experience that deeply moves the soul.
It was an interesting experiment to see what effect this acoustic impression could have on the brewing process and the rice, which is also white and round.
